As I just wrote earlier this week, I tend to have a pretty restricted diet – and two things I eat almost daily are cucumber and watermelon.
Today, as Sara and I were out getting a few things for Father’s Day weekend, I came across this absolutely fantastic looking Cucumber Watermelon Salad recipe on Pinterest.
We even had ALL the ingredients – except for mint. . .
Well, you non-wannabe farmer types would simply go to Walmart or Publix and BUY some mint. . . but, oh no. That is not how we roll here in the Hippie Hut. 😉
See, why would we go and purchase a tiny container of mint to have NOW for like $4 – when we can grow a kit for the same amount and have sooo much mint in perpetuity in a few weeks? So convenient, right? (bahahaha.)
(I was open to purchasing an already growing mint plant and repotting it – but they had none available. So, we must farm – and wait. hehe.)
Yes, I am totally aware of how ridiculous this sounds to those who don’t feel the overwhelming urge to – Grow. All. The. Things. – but, once you have been bitten by the gardening bug, there is never an occasion to buy a mint bundle when you can start a mint garden instead – and I cannot be reasoned with. 😉
(This is also how I likely end up with 73 varieties of herbs now – just in case we need them for recipes. bahaha.)
We’re looking forward to a lovely Father’s Day weekend here in the Hippie Hut, continuing to recover from the Great Plague of June, celebrating my amazing husband, visiting our Pop for his birthday and Father’s Day, and doing some planting. I hope y’all have a wonderful holiday weekend as well. ❤
