beginning the seven days of thanksgiving – grateful for new kitchens, getting back to cooking, and this cozy at-home mom life.

Despite my best efforts, I have been so busy with end of term schoolwork and (STILL) sorting this flare that I have not been able to finish my CRPS Awareness Month post yet. (Also, to say it is a bit taxing to write is an understatement.)

Still, it is now a week until Thanksgiving and I absolutely do not want to miss my annual daily Thanksgiving observation leading up to the holiday – so I’m going to set the CRPS post aside, with plans to finish it before the end of the month, to start happier things right now.

Happy Thanksgiving Week here on The Autoimmune Hippie, y’all. It’s Day 7, starting our count down to next Thursday – with Turkey Day and our family home and lots of goodies and the Egg Bowl ❤ – and I am so excited for this whole week between. ❤

There is so much to be thankful for – just being here for another Thanksgiving to start, always. ❤

Each day, there are so many blessings along the way from the Lord, too many to count.

Today was grocery day and has me thinking how I am especially thankful for cooking, a thing I once took for granted as a “simple” daily activity – but now I know much better. There have been times over the past few years when I have been so ill that I literally only was able to stay in my bedroom for days at a time and never expected to be able to be up and Doing. The. Things.

Now, when I can be up doing even the “small” things, though my pain levels may be uncooperative at times and I’m pretty slow, I am just so deeply grateful, no matter. It is absolute grace to be able to do them at all. ❤

As I wrote over the summer, my husband remodeled our kitchen counters and backsplashes as the most wonderful anniversary gift for me:

an amazing gift.

He is still adding even more for Christmas – which I will share (of course) – but it is already just the best space and I love it. ❤

I love to cook and I have been so happy to be able to turn on my music, put on my apron, and make meals for my people again (no matter how spoonie slowly). ❤

It’s so much fun working through old and new recipes, finding new favorites for our family, and having tailgate foods for Saturday gamedays.

meatloaf – one of our favorites.
steakhouse potatoes au gratin.
chicken and rice soup.
this is a layered tamale pie that is so yum.
mexican cornbread has become our family go-to. ❤
gluten free sausage balls.
cocktail weenies are always a gameday hit.
taco soup.
we had several yummy snacks at Bug’s party – in particular, the ooey gooey chocolate dessert was a big hit.
pastalaya.
shepard’s pie.
hamburger steaks with a super yummy gravy mix.

I’m so excited to plan our family holidays as well. Oh my heart. ❤

I’ll see y’all tomorrow – well, this Thursday post is super late night – so really later today 😉 – for Day 6 of Thanksgiving.

Be well, everybody. Take care of yourselves and each other.

Grace and Blessings.

Also, as with last year, I’ll be closing this year’s Thanksgiving posts with “The Blessing” for everyone. ❤
