trying new things, vision boarding, and gratitude.

One thing I’ve noticed used in many AIP recipes is spaghetti squash so I want to learn to cook with it. I also want to learn how to cook more with the spiralized veggies – squash, zucchini, beets – that have become popular. So, of course, I got to pinning and found some recipes and set out to the grocery store.

Today’s recipe was going to be a spaghetti squash base – but Publix only had one and that wasn’t enough for what I needed. (I picked it up anyway though to cook for lunch tomorrow, as my first practice run.) Since I still wanted to make my recipe, I bought the already spiralized raw butternut squash that Publix had available instead.

And, for dinner, I made Chicken Meatballs and Lemon Garlic Butternut Squash Noodles:

It was really good – and I had apples for dessert.

Later this evening, I did update my vision board as suggested as well:

Honestly, I am so grateful for this process.

It’s giving me hope that I can help my body heal, through eating real foods that God made, the appropriate ones for my situation.

It’s let me work on learning much more about the nutritional specifics of AIP (and I have SO much to learn), which I love to do and am passionate about with my training in integrative nutrition.

It’s letting me focus more on my writing – and, at the same time, additional opportunities have been coming for me in that area as well (and I am so so thankful).

So much to be grateful for!

(Also, I’ve already lost a pound and am seeing much better blood sugar control.)

Unfortunately, my pain is still out of hand, so, tomorrow (well, really, today) my project is going to be making some turmeric gummies, in addition to my regular cooking. Hopefully, they will be helpful.
